INSTANT RICE
is rice that
has been fully cooked (much like you would at home) and then dried down
to below 12% moisture. Instant rice can then be recooked by the
consumer in less time than the twenty minutes required to cook white raw
rice. Instant rice is most commonly used by the industry to make
quick meals for consumers. It is typically mixed with seasoning
and may be mixed with instant beans or vegetables. It is sometimes
used as a component ingredient in products such as eggrolls or
enchiladas.
Sage V Foods makes instant rice
from white long grain rice, parboiled rice, and brown rice. The
company can make instant rice from some specialty varieties and medium
grain varieties. Process conditions can be adjusted to make
instant rice that recooks in as little as 5 minutes in hot water, or
cook times that range up to 12 minutes in simmering water. Cook
times can be custom adjusted to match the cook times of other products
in a final formula mix. Final moisture content of the instant rice
is typically 10% to 12%, but can be reduced to 6% for applications where
the rice is blended directly with seasonings.
